Good storage protects food quality and also helps prevent allergen mix-ups and unintended contact.
Keep labels attached
Retain original packaging whenever practical so ingredients, allergen information, storage directions and dates stay with the food. If you transfer food to another container, add a clear label.
Separate and seal
Use closed containers and store free-from ingredients away from products containing allergens that must be avoided. In a fridge, keep foods protected from drips. In cupboards, separate open baking ingredients that can spill or create dust.
Respect temperature
Follow package instructions for refrigeration and freezing. Return chilled foods promptly after use and avoid overfilling the fridge, which can reduce air circulation. Use a fridge thermometer if temperature consistency is uncertain.
Date prepared foods
Mark containers with the preparation or opening date. A first-in, first-out system makes older food easy to identify. When freezing, use portions that can be defrosted without exposing the entire batch.
When in doubt, discard
Do not taste food to decide whether it is safe. Discard food when its storage history is unknown, packaging is damaged, labels are missing or contamination may have occurred.
